ST014Provide visitor information Accesses general information on facilities, products, and services available in the local area and provide information to visitors. Learn its application in classroom teaching and practice in a simulated industry environment to record simple notes and basic information on local facilities, products, and services. Listen and respond to a range of visitor requests, asking questions to clarify and confirm. ST026Lead tour groups Develops students’ understanding of guiding requirements, and specific skills vital in managing group members and managing a tour itinerary, and leading tour groups. Learn its application in classroom teaching and practice in a simulated industry environment, and/or a commercial environment where tour guide activities are conducted to provide students with an understanding of the principles and practices of planning, operating, guiding, and managing a tour.
ST010Participate in work-safe practices Introduces the concepts, code of ethical principles, and standards to be able to work safely in the workplace. ST033Visitor Statistics in Tourism and Hospitality Conducts an evaluation of a wide range of statistically based tourism and hospitality reports and apply knowledge to maximise hospitality sales and service opportunities.
ST034Electronic Reservations Applies and uses computerised reservation system in accordance with customer requirements, and travel industry workplaces policies and procedures. Related documentation is prepared in accordance with customer requirements through assessment in travel industry workplace policies and procedures.
ST035Plan and deliver and guided interpretation Presents a review a prepared interpretation plan in preparation for a tour; plan the delivery of guided interpretation during a tour; prepare visitors for a tour; deliver guided interpretation during a tour; manage a tour in a professional manner; facilitate visitors’ use of an attraction, service, and/or facility on a tour; conclude a tour; gather feedback from interpretive activities and use such feedback to review and improve interpretation plan.

ST037Health and safety in tourism and hospitality Identifies legal responsibilities of tourism and hospitality business operators in relation to health and safety; demonstrate knowledge of critical incident management; carry out health and safety roles and responsibilities in a tourism and hospitality workplace; and select safe routes for clients.
ST020Participate in environmentally sustainable practices Introduces the concept of sustainable work practices, the principles of sustainability, and its knowledge bases. Learn its application in classroom teaching and practice in a simulated industry environment to support sustainable work practices, measure sustainable work practices, and seek opportunities to improve workplace practices.
ST021Sell products and services Gains an understanding of the principles of providing quality customer service to sell products and services to retail customers. Determine customer needs, match products and services to their needs, and facilitate a sale. ST022Book supplier products and services Develops students’ understanding and know-how to administer customer bookings for products and services. Identify customer booking requirements. Administer all bookings through to finalization. Learn its application in classroom teaching and practice in a simulated industry environment to interpret existing or create new records of customer booking requirements. Select suppliers according to negotiated arrangements to maximize the profitability of the sale. Use the appropriate method to request products and services from suppliers. Update and finalise bookings.
ST023Process reservations Develops students’ understanding and know how to process reservations manually and using reservation electronic software. ST042Knowledge in Yield Management Develops and demonstrates knowledge in yield management.
ST043Managing Workplace Security and Health and Safety Develops a set of competencies for people who hold supervisory or managerial roles in the front office of an organization. At the end of this unit, students will be able to manage and oversee the security and health and safety of an organization (property, workers, and customers).
ST044Monitor and Maintain Interactions Develops a set of competencies for people working in a service delivery role. At the end of this unit, students will be able to monitor and maintain interactions to ensure service delivery outcomes are met.
ST031Interpersonal communication Designs for people entering, or employed in, the service sector who wish to build their customer service skills. People credited with this unit standard are able to: describe customer service in both English and Tongan; provide customer service; respond to a customer complaint and be knowledgeable of health and safety requirement.
ST032Tonga as a tourist destination Develops and demonstrates knowledge of Tonga as a tourist destination and identify and describe Tongan man-made and natural tourism attractions and products.

Semester 1: ST505, ST1520, ST1517

ST1520Fundamentals of Computer Networking Introduces students to the concepts of basic networking technology networking monitoring availability and security. Students will have the opportunities to demonstrate the OSI Model the functionalities and protocols involve in each layer through practical tasks.
ST1517Essentials of Mathematics and Statistics Equips students with application of Mathematical knowledge and skills relevant to their interests and produce a foundation for modules in subsequent years of study. It consists two components a field common to IT and IB. This is an elective course.

ST1504Business Communication Designs to provide a theoretical framework and practical experience as a basis for improving communication skills in the business environment.
ST1510Principles of Hospitality Management Introduces students to the hospitality industry, both globally and within New Zealand.  The course provides a thorough understanding of the characteristics of the hospitality industry and introduces the student to the many sectors which form part of it.  This includes the hotel sector, food and beverage operations, accommodation management, managed services, gaming and other attractions.  The course introduces the concepts of sustainability and how these may be applied to each sector of the industry.

ST1513Accounting and finance for Hospitality Industry Examines selected issues in financial reporting and accounting from both theoretical and practical application perspectives, including current developments in financial reporting in New Zealand and overseas.
ST1511Food Production Operations Provides students with an introductory knowledge to Food Production Operations in New Zealand and the Pacific Islands. The course introduces the processes and practices involved in preparation and production of food in a commercial operation. The course will introduce food safety, safe working practices and personal food hygiene. There is an emphasis on menu planning, food costing and budgeting for a variety of food production operations.
ST1512Food and Beverage Service Operations Provides students with the knowledge and skills required to serve food and beverages within commercial operations. It will focus on understanding components of the meal experience in particular the food and beverage menu, customer service and the expectations of different customers. Learners will develop an understanding of the styles of food served in different types of food and beverage operations and develop skills to design and produce menus.
